A capon is a rooster that is castrated before it matures, and this is done because a lack of testosterone causes more fat to form on the chicken’s muscles. This may be more information than you wanted to know, but fewer hormones in a male chicken make it more moist, tender, and flavorful that is well-suited to roasting. They tend to be less gamey than an intact rooster would, and have a higher fat content.
Melissahof capons are raised all-natural and on pasture from 2 weeks of age. Hatched and harvested on Melissahof near Lander, Wyo. These are the brothers of the female chicks sold across the Cowboy State from Melissahof Hatchery. The chickens ate pasture grass, insects, soil fungi, and were supplemented with a corn, oat and barley feed mix grown locally in Fremont County. Surgically, not chemically, caponized
