The unique umami molasses flavor of black garlic elevates hummus from something to coat a chip to foregoing the chip in favor of eating it by the spoonful. Black garlic can be added to a traditional chickpea hummus.
Melissa’s hummus recipe uses winter squash alongside the chickpeas. Here in the spring, the winter squash have reached the end of their storage capabilities. Puree it for use in hummus immediately, or freeze the squash puree for a summer of hummus.
